Brewed a day before Christmas utilizing the traditional German decoction method, this Dopplebock was fermented cold and slow over more than two months for a traditional bock you can usually only get in Germany. Of course, we added a twist by including a little rye and some American hop varietals. Round, very rich, and spicy with notes of honey, clover, cereal grain and a little grassy hop bite for balance. Sweet, but not as cloying as many bocks can be since we gave the yeast the time it needs to do its work.
