A Maibock is a big, rich German lager, brewed to celebrate the transition into summer. Traditional breweries of the style follow a process called decoction mashing to brew this classic beer. We double decocted this beer. This process, and the equipment necessary to do it, have been lost in most American breweries. That said, we have what we need to make a true German beer in Minnesota. Furthermore, we lagered the beer in our cellar before release to ensure the most mellow, balanced, clear beer possible.
